Healthy Veggie Chili | Little Lessy

IT’S SLOW COOKER season. I’m calling it. It’s officially fall, so it’s happening. And happen it did.

It was a very rainy Sunday and after having a rather unproductive Saturday (unless you consider watching 6 episodes of Newsroom productive) I knew I needed to add a little worth to the holy day. I also knew I needed exercise. Did I mention it was pooooourrring? I decided rain or shine I’d force myself out on a run (I actually kind of like running in the rain but more so in a light drizzle, less so in a hurricane). I figured I’d get a nice and healthy veggie chili going in the crock-pot and time it so that it would be ready upon my return from a wet and cold jaunt.

I didn’t really follow a specific recipe because I couldn’t decide on one I liked so I went a bit rogue. I also was inspired (re: bored) so I got a little creative in the kitchen and filmed this little ditty.

I’ll tell you what’s in it but it was all rather approximate – that’s kind of the beauty of the slow cooker right?

Veggie Chili Spices

• Onion
• Celery
• Carrots
• Zucchini
• Green Onion
• Sweet Potato
• Garlic
• Pepper
• Jalepeno
• Kidney Beans
• Diced Tomatoes
• Cumin
• Cocoa Powder
• Chili Powder
• Cinnamon
• Water
• Salt and Pepper

Please excuse the terrible photo I was pretty hungry when I got home from my run and couldn’t wait to scarf this down. I finished it with a dollop of non-fat plain Greek yogurt and some green onion and it was delish! On a side note, I accomplished my goal of running a 30-minute 5K so I was pretty freaking stoked about that too.
